A perfect breakfast meal prep idea where you can prep your 3 ingredients once, and have low carb bacon & eggers all week!

This is almost too simple to even be a recipe, but given the amount of hard boiled eggs and cheese I am eating, I thought it would be fun to spice it up a bit with these little Low Carb Bacon & Eggers. Not really a recipe, more like breakfast inspiration!

I don't follow any particular low carb diet, I just find hardboiled eggs and cheese such a simple breakfast, I have been eating this combo for months and months. I have a whole post about how I use 3 main things and create many combinations of breakfast boxes. That post is here.

For meal prep, on Sunday, I make my hard boiled eggs ( I do them in the Instant Pot using this method), make my bacon for the week ( I do oven bacon using this method), and I cut up my cheddar and store in an air tight container. When I go to eat these, I assemble them. Easy Peasy!

You can get creative using different types of cheese and if you really want you can add in sauces like dijon mustard... or dare I even say mayo ( hi, keto peeps!).

I prefer no sauce on my low carb bacon & eggers, but you do you, friends!

Low Carb Bacon & Eggers

Prep Time: 20 minutes
Servings: 3 sandwiches
Calories: 197kcal
A perfect breakfast meal prep idea where you can prep your 3 ingredients once, and have low carb bacon & eggers all week!

Ingredients

  • 3 Hard Boiled Eggs
  • 1-2 pieces bacon
  • 3 slices cheese

Instructions

  • To assemble your low carb bacon and eggers, simple cut the hard boiled egg lenthwise, and layer on one piece of cheese, and half a slice of bacon. Use a toothpick to hold it together if not eating it right away.

Calories: 197kcal | Carbohydrates: 1g | Protein: 14g | Fat: 15g

So, there you have it, a low carb breakfast option for this week!

    These look like a great idea! Have you ever frozen them? I usually make breakfast sandwiches and freese them, but these might be something I want to try to add something new to my breakfast.

      I wouldn't freeze hard boiled eggs. I freeze scrambled eggs, but I don't think HBEs would hold up the same.

    If you want to make them up ahead and put them in the frig. I make them up and cut the bottom of the bottom egg flat so that they sit on a plate without tipping over.

    This looks amazing! When you prep your bacon, I noticed it’s in a glass jar. Do you store that jar in the fridge or just at room temp?

    I don’t understand how 3 of these is only 197 calories. A standard hard boiled egg is 70 calories alone so that’s already 210 calories just in eggs, not to mention the bacon and cheese. Could you elaborate on the calorie breakdown?
