Based off my recent Pinterest search history and recent blog post about prep ahead camping meals, it is clear that I am on the hunt for recipes that can go from the freezer, to a BBQ or oven – and create about zero dishes for me to clean up.

It is summertime and our family has double or triple booked activities every night of the week, and after working all day, chopping, cooking and cleaning is the last thing I want to do.

But, I want to eat at home, and eat real food. The struggle is real!

So, I have been relying on a local meal assembly place here in Airdrie, Alberta. Here, I pick my meals online and then walk in to my session, prep my recipes with everything there already pre chopped and ready to go. I simply assemble and then leave!

All of the recipes at Social Supper are real ingredients, freezer friendly, and prevents me from planning, shopping, chopping and cooking – so I have relied on my freezer meals from there to get me through summer, and stay out of drive thrus.

Bonus points as so many of the recipes on the June menu have been perfect to take camping… Including this gem that owner/girlboss, Kaidy is sharing on the blog with all of you!

When I posted my picture of making their Turkey Taco in a Bag for dinner on my Facebook page, there were instant requests for the recipe.

Freezer Friendly Turkey Tacos "In a Bag" (Foil Pack)

Ingredients

  • 2 pounds ground turkey cooked
  • 2 cups diced tomatoes
  • 2 cups black beans
  • 1 cup corn
  • 1 cup diced red bell pepper
  • 1 cup diced red onion
  • 2 Tablespoona cumin
  • 1 Tablespoon chili powder
  • 2 teaspoons oregano
  • 2 teaspoons paprika
  • 2 Tablespoons diced canned Jalapeno or to taste (if fresh reduce to 1 Tablespoon)
  • Optional toppings such as tortilla chips salsa, sour cream, lettuce, cilantro and avocado.

Instructions

  • Combine all ingredients in a bowl.
  • Divide mixture between 4- 5 pieces of foil.
  • Pinch all the seams closed to create a packet.
  • Heat on grill or campfire, 12 minutes per side, or until warm throughout
  • Add desired toppings.

Notes

For prep ahead freezer meal prep: label a gallon size freezer bag and put foil packs in flat to freeze. To reheat, thaw overnight in the fridge and heat in oven, BBQ or campfire until warm throughout. Cook time will be dependent on heat source. 12 minutes each side is a good estimate.
