Air Fryer Sesame Ginger Carrots

Growing up, the only carrots I ever had were boiled carrots with butter. I think maybe, just maybe, one time my mom went wild and added dill. Or maybe it was a dream. I honestly am not sure.
Boring carrots were a hallmark part of my childhood. Sorry mom, I love you. Don’t hate me.
Creative dinners were not a thing for me growing up.
I get it. Both of my parents worked long days out of the home. My mom commuted on public transit every day which added even more to her long day. On top of it all, Pinterest and google didn’t even exist. So… I get it. It was easy, boiled carrots for the win.
When I moved away for University at 19, I didn’t know how to cook. I moved in with my bestie who is a culinary whiz. While I was too intimidated to try most of the things she made, it exposed me to a whole new way of cooking.
Here I am nearly 15 years later with a food blog… and an Air Fryer.
I am pretty sure Laura reads the blog with her jaw on the floor wondering how the girl who lived off celery and peanut butter ended up with a food blog!
Although I do like to cook, I still am lazy. I like simple ingredients from my pantry. I also like using my air fryer because I am so freaking impatient to get that food in my belly.
This recipe hasn’t been tested in the oven, but I don’t see why it wouldn’t work.
Air Fryer Sesame Ginger Carrots are on the table in SEVEN MINUTES. No lies here. SEVEN MINUTES. Pair these with oh….. any protein and a side of rice and I bet the whole family devours carrots like you have never seen.
Air Fryer Sesame Ginger Carrots
Ingredients
- 2 cups sliced carrots
- 2 tbsp sesame oil
- 1 tbsp minced ginger
- 1 tbsp soy sauce
- 1 tsp minced garlic
- 1 tbsp scallions, chopped for garnish
- 1 tsp sesame seeds for garnish
Instructions
- In a medium bowl, combine all of the ingredients, except the scallions and sesame seeds.
- Pour the contents of the bowl into the air fryer basket.
- Set the air fryer to 374F for 7 minutes.
- Shake the basket half way through the 7 minutes.
- When the time is up, transfer the carrots to a bowl and add the scallions and sesame seeds. Serve warm.
