Pork tenderloin is one of my go to freezer prep meals.

When I buy a bulk package of pork tenderloin, it is really easy to put each into a bag and add some spices or make a sauce and toss in the freezer for a future meal.

My preference for this recipe is to bake it in the air fryer, but you could do this in the oven no problem. I will provide directions for both.

I write my recipes for one single pork tenderloin for 2-3 people, but if you have a larger family you can easily prep 2 and store them together. This recipe is easily doubled ( I personally wouldn’t double the rosemary, though)

My love affair with Tuscan flavors started with this Tuscan Stew. It was my friend Denise at Sweet Peas and Saffron that told me that I need to crush up the fennel seeds for best flavor.

Since she told me that, I have been playing around with dried fennel, and this is the recipe that was the winner!

Tuscan Pork Tenderloin {Freezer Prep}

Cook Time 25 minutes

Ingredients

  • 1-1.5 lb pork tenderloin (not pork loin)
  • 1/4 tsp fennel seeds, crushed
  • 2 cloves fresh garlic, minced
  • 2 tsp dried rosemary
  • 1 tsp dried thyme
  • 1 tbsp olive oil
  • 1/4 tsp fresh ground pepper
  • 1/2 tsp salt

Instructions

Freezer Prep Assembly Instructions

  • Place the pork in a freezer zip bag. Add  all of the ingredients to the bag. Massage the ingredients into the pork. 
  • Remove as much air as possible, label, and place in freezer for up to 4 months. You can store it longer if you use a vacuum sealer. 

Cook Day Instructions - Air Fryer

  • Thaw your pork tenderloin overnight in the fridge.
  • To cook in the air fryer, Place your pork tenderloin into the Air Fryer basket.
  • Set the temperature to 350F and the timer to 15 minutes.
  • After 15 minutes, flip, and set time for another 10 minutes.
  • After the cook time check the internal temperature. 145F for medium rare, and 160F for medium. As written, this recipe is for medium. If you want it medium rare, decrease the time to your desired doneness.

Cook Day Instructions - Oven

  • Thaw your pork tenderloin overnight in the fridge.
  • Preheat the oven to 400F
  • In an oven safe skillet, heat olive oil, and brown each side of the tenderloin.
  • Once browned, place the oven save pan and browned pork into the oven for 20-30 minutes. Check internal temperature for doneness. 145F for medium rare, and 165F for medium.
