After Eight Nice Cream Dessert

 After Eight mints are a classic holiday after dinner treat, but here, they are blended up into a creamy nice cream dessert! 

     

Nice cream, also known as banana ice cream, comes together in under 5 minutes, and no additional freezing time is needed! 

This is a great recipe to get the big kids or teens making dessert this holiday season!

If you haven’t tried nice cream before, you will be shocked at how frozen bananas can be blended up with some cocoa, and After Eight mints to create a super creamy dessert.

Can this be even more like Ice Cream?

Yes! You can add a fat like coconut milk to your nice cream to make it even more like a traditional ice cream. 

Can you taste the bananas?

Yes, the base of this recipe is bananas and you can taste them.

Can I swap out the bananas?

No, this recipe needs bananas for the texture – sorry! 

Can I make After Eight nice cream dairy free?

Most nice cream recipes are dairy free. But, because this one has After Eight mints, it is not dairy free. 

But, you can get around this and end up with a mint chocolate dessert that is dairy free. 

Simply use dairy free chocolate chips instead of the After Eight mints. No, it is not the exact same, but it is a good runner up! 

Do the Bananas have to be frozen?

Yes, the bananas have to be frozen for this. 

 If you have never flash frozen bananas before, here is how. 

How to Make After Eight Nice Cream Dessert! 

Load up your food processor with frozen banana, peppermint extract, cocoa, and After Eight mints.

I have the Breville Sous Chef food processor (affiliate link), and it is by far, the best (yet most pricey) food processor I have had. I highly recommend it – the attachments make my prep life so much easier. This is more than just a a typical food processor.

Set your food processor to high and let it get to work.

As it gets going, your mixture is going to look like this – and not like nice cream.

Have no fear. Scrape the sides, put the lid on and keep going.

After a few minutes, you will end up with this creamy bowl of after eight nice cream.

Don’t forget to freeze some of your after eight mints and break them up for topping.

To do this I put them in a zip bag and then smash them with a rolling pin or meat tenderizer.

Can this be made ahead and frozen?

Yes!

Just make sure you let it thaw out a few minutes before serving it. The texture is still creamy if you freeze this for later (if you let it thaw for a few minutes!)

Equipment

  • Food Processor

Ingredients

  • 4 over ripe bananas, frozen, cut into 1" chunks
  • 1/8 tsp peppermint extract
  • 1 tbsp cocoa powder
  • 4 whole After Eight mints (frozen or not)
  • 4 frozen After Eight mints frozen then smashed to make topping.

Instructions

  • Place all ingredients (except the frozen After Eight mints for topping) into a food processor.
  • Blend until smooth. You may have to stop, remove lid and scrape the sides down a few times.
  • Top with frozen After Eight mint chunks.
  • Serve immediately or freeze.

Notes

If this is made ahead and frozen, ensure it is removed from the freezer 5 -7 minutes before it is time to enjoy it!
