There are 2 types of people in this world. 1- Pickle LOVERS, and 2- weirdos. 

Ok, just kidding.  But, I am definitely one of those pickle lover people, and if you clicked on this recipe, I am thinking you might be too! Pickles.... Air Fryer... crispiness.... OH MY!

I had to give this recipe a few tries before I got it just right. I also tested it as a freezer prep meal.... and winner winner chicken dinner!

How do I freeze this so it doesn't just all freeze in a big ball of dill-icious chicken?

Flash freeze on a cookie sheet for about 4 hours, then transfer to freezer safe container!

I also tried this in the oven. Will it work? Yes. Is it the same? NOPE. 

Also a fun learning..... The oven didn't even come to temp before the first batch was done in the Air Fryer! So in the Air Fryer, I was eating some crispy dill pickle chicken with in 15 minutes. The oven, after preheat and longer cook time, it was an easy 30 minutes. Maybe even a bit more.

Crispy Air Fryer Dill Pickle Chicken {Freezer Prep}

Prep Time: 10 minutes
Cook Time: 12 minutes
Total Time: 22 minutes
Servings: 4

Ingredients

  • 10-12 Boneless, skinless chicken thighs
  • 1 cup bread crumbs
  • ½ cup chopped fresh dill
  • 2 tablespoon Dill pickle dip seasoning
  • 2 eggs
  • ½ cup pickle juice
  • ½ teaspoon fresh ground pepper

Instructions

  • In a medium bowl, combine the bread crumbs, fresh dill, dill pickle dip seasoning, and the pepper. Set aside. 
  • In a second bowl, whisk the eggs and pickle juice together. 
  • Dredge eat piece of chicken through the dill pickle egg wash and then into the bread crumbs. Repeat until all pieces of chicken are coated.

To Freeze

  • Place each piece of chicken on a parchment lined baking sheet. Ensure they are not touching. 
  • Place in the freezer for 4 hours. 
  • Transfer from baking pan, to a freezer safe container. 

To Cook | Air Fryer

  • Place the chicken in the basket of the air fryer. Do not stack them on top of each other. If making more than 5, you will have to work in batches. 
  • Set the temperature to 370F and cook for 10-12 minutes, flipping half way through. Cook time will depend on the thickness of your chicken thighs. Check doneness with meat thermometer and cook to a minimum of 165F.
  • In the last 2-3 minutes spray the chicken with oil of choice to get that deep fried texture. 
  • I have tested these from frozen using the Air Fryer. Adjust time to 8 minutes on each side and lower temp to 350F.

To Cook | Oven

  • Preheat oven to 400F
  • Arrange the chicken on a parchment lined baking sheet.
  • Bake at 400F for 20 minutes, flipping halfway. Spray with oil for a more deep fried texture.

      It's those little packets you get to make dip - the ones where you add mayo and sour cream.

    can you buy pickle juice without the pickles? Or do I just need to eat more pickles?!

      Oh I am sure there is somewhere you can buy pickle juice ha! but as a general rule, eat more pickles!!

      Yes, I would sliced them lengthwise to make them thinner, even pound them flat a bit. The texture also won't be as moist. But, it will work.

    I made this tonight and both my husband and I loved it! (Even without the dill pickle dip seasoning-my small town grocery was out.) Can’t wait to try it with it. It will be even better, I’m sure! So good!

    Where do you find the pickle dip seasoning? I looked at Publix (Florida) , fresh market, Whole Foods and Gordon foods with no luck. Should I just use some dried dill weed?

      I am in Canada with different stores, but I find it with the salad dressings.
