All the makings of the summer taste of a mojito, combined with all the beautiful colours and fruity flavours of summer, in one little cup! Say goodbye to those syrupy fruit cups, and hello to these fresh little Melon Mojito Fruit Cups!
I mean, who doesn’t like fruit in the summer! Add it the subtle flavours of a mojito … and BAM! We have a winner!
Ok, so the little heart watermelons are totally not needed, and to be honest, I am kind of regretting doing them because I have now set this ridiculous watermelon standard for the summer. My daughter now thinks watermelon tastes better in heart form and wants only heart watermelon all.the.time.
Don’t need the cute little fruit cup version? That is ok too, mix it all up and serve it up at the next picnic or BBQ! Or, if you are my mom, mix it up and eat the entire portion in one sitting – right out of the mixing bowl.
In fact, I created this specifically for my mom – who is, like any good mom, the person that reads my blog the most…. and she doesn’t meal prep, plan, or have an Instant Pot. She is the best! So, thanks mom, this one is for you!
Melon Mojito Fruit Cups
- Juice of one lime
- 1 Tablespoon chopped fresh mint
- 1 teaspoon sugar
- 1 - 2 cups cantaloupe melon balls or cubed, approximately half a small melon
- 2/3 cup fresh blueberries
- 3 fresh strawberries sliced
- 1 cup watermelon cubes
- Mix all of the ingredients in a bowl!
- Portion into individual portions.
- Store in the fridge for up to 3 days. This is actually better on day 2 and 3 after the mint and lime sit for a bit!
So, there you have it, a prep ahead, portable summer fresh fruit cup, without the thick sugary syrups, and all the freshness of a mojito!
