I know there are many mixed feelings about using your Instant Pot as your primary rice cooker. That is cool, to each their own. But, we are on team DO IT at my house.

Especially for this Savory Instant Pot Rice and Veggies recipe!

Of all of the buttons on the Instant Pot, the rice button is a special “smart” button.

First of all, it is the only program that defaults to low pressure cooking, and it is the only one that will automatically adjust the time depending on the volume of food in your instant pot. Just like a traditional rice cooker that magically knows how long to cook your rice for, depending on how much you are cooking.

The only other thing I have learned is that I don’t like making rice in my 8 quart. Too much of the rice is on the bottom surface of the pot and it comes out much different. I have no issues in my 6 quart model, and find my 3 quart does rice the very best!

I have to admit that this recipe isn’t mine. It is my husband, Brad’s creation. He has started getting into his own meal prep game and made this one day when I wasn’t home. I ate the leftovers and fell in love… with the rice… I mean he is ok too.

He then told me he wrote down what he did so I could remake it to put it on the blog. say what!?!

This is the rice he makes for his meal prep lunches. It is jazzed up just a bit and makes rice a little less boring and a whole lot more savory.

This recipe calls for Beef flavored Better than Bouillon, and it makes a huge difference in taste.

If you don’t have it or want to use it, replace it (and the water) with 3 cups of beef broth and skip the saute step.

Savory Instant Pot Rice and Veggies

Ingredients

  • 2 cups uncooked basmati rice
  • 3 cups water
  • 3 tbsp Better than Bouillon, beef flavor
  • 1 cup chopped fresh green beans (1 inch pieces)
  • 1 cup sliced fresh mushrooms
  • 1 cup frozen peas

Instructions

  • Select the saute button and pour the water and beef better than bouillon into the liner. This will allow it to dissolve and make a broth. If you choose to use beef broth instead. You don't need the saute step.
  • Add the remaining ingredients and stir the mixture. 
  • Secure the lid to the Instant Pot, set to sealing, and press rice. This will auto set to 12 minutes of low pressure. 
  • When the pressure cycle is complete, quick release the pressure. Fluff the rice with a fork, and enjoy!

  1. I love the instant pot for rice. Maybe I had a crummy rice cooker but the IP makes much better rice. Thanks for the recipe I’m going to try it tonight.

  2. I made this for dinner and YUM! I didn’t have any peas so I added corn instead but Mine came out darker than your photo, is it the lighting or did I use too much bouillon?
