Vanilla Chia Seed Peanut Butter

Making peanut butter in the Vitamix is so easy, and kicked up just a notch with a few ingredients to make it Vanilla Chia Seed Peanut Butter!

I got on the make my own peanut butter train with just blending up unsalted peanuts. Yes, one ingredient peanut butter. But it wasn’t long before I started experimenting and adding some of my fav things.

It wasn’t long before Vanilla Chia Seed Peanut Butter was born! 

Now, you do need a high speed blender for this. I use a vitamix, and I used to use a Blendtech model so I know those work well. I don’t know how this would fair in less powerful blenders – sorry!

This recipe is a snacker’s dream. I like to portion mine out and keep it with my apples for a super easy and quick grab and go snack!

This peanut butter has been tested in the fridge – I wasn’t sure what it would do with the coconut oil. I wanted to make sure it didn’t go rock hard or separate in any way.

IT DOESN’T SEPARATE. It is amazing.

Right out of the fridge, I would say that the consistency is sort of like raw cookie dough. I take a knife and give it a few stirs and it is soft to spread on toast!

Making peanut butter in the Vitamix is so easy, and kicked up just a notch with a few ingredients to make it Vanilla Chia Seed Peanut Butter!

Ingredients
  • 4 cups Unsalted roasted peanuts
  • 2 tbsp vanilla extract
  • 2 tsp coconut oil
  • 1 tbsp chia seeds
Instructions
  1. Add all ingredients to the blender, except the chia seeds. You can add more coconut oil if you like a smoother peanut butter. 

  2. Blend on low speed, gradually increasing to full speed. You will need to stop the blender and scrape the sides down a few times if you don't own a tamper tool. If you have a temper, you can just move the peanuts around while it is blending. It will take 1-2 minutes to go smooth.

  3. Add the chia seeds to the blender jar and pulse a few times until the chia seeds are incorporated. 

  4. Transfer to air tight containers. Homemade peanut butter is good for 6 months in the fridge! But... it will be gone before then! 

So, there you have it, a little EASY, no gross filler, deliciousness for your snacking and breakfast games!
