Cheeseburger Meatloaf Minis
Muffin tin meal prep meets cheesy delicious cheeseburger deliciousness with these Cheeseburger Meatloaf Minis! Instant portioning and jam packed with much more nutrition than a take out burger!
Muffin tin meal prep is the best! Portioning is a dream, and a tray is usually more than a couple servings made all at once. Win-Win.
Brad has been making his own bacon and BBQ sauce “meat muffins”, and I thought, awesome, but needed a version that was more my style. His have ground pork, and bacon, and BBQ sauce. Mine have ground turkey, quinoa, and all the tastiness of a cheeseburger!

Cheese, pickles, mustard, and onions….. all of the right players came to play on this one! I added quinoa too… because quinoa = protein and I am always trying to get more protein in!
The recipe as written is just for the cheeseburger meatloaf minis, but you can add any sides you like to make it a complete meal prep lunch.
You might be thinking the pickles are strange. woah woah woah. First, we can’t be friends if you are not down with pickles. Second, they add a crunch and a bit of salt to really make this feel like a cheeseburger. I mean if I can get away with putting dill pickles in soup (that is right here), then surely I can get away with this too!

Cheeseburger Meatloaf Minis
Ingredients
- 1 lb ground turkey or ground chicken
- 1/2 cup cubed cheddar cheese
- 1/2 cup chopped pickles
- 1/4 cup diced onion
- 1 tbsp ketchup
- 1 tbsp mustard
- 1/2 cup cooked quinoa
- 1 whole egg
- pinch salt and pepper
Instructions
- Preheat oven to 400F
- Combine all ingredients in a bowl and gently combine.
- Divide the mixture into a greased muffin tin. This recipe makes 10-12 mini meatloaf cups, depending on how big you make them.
- Bake at 400F for 20 minutes.
- Eat warm right away, or let cool and divide into meal prep containers for lunches!
