Is there anything you can’t put chipotle peppers in and not make it better?! Ok, probably, but certainly not this super easy Low Carb Chipotle Tuna Snack Box!
Canned tuna can be kinda boring, no?
But, it is such an easy meal prep option.
Lucky for you, I don’t do boring. I take boring, and add some spice and usually veggies.
That is exactly what I did here with the Low Carb Chiptole Tuna Snack Box!
The tuna part of this box, is a simple 4 ingredient combo, with one being… you guessed it… chipotles in adobo!
I find this in the mexcian section (hi tacos!!) of my local grocery stores.
These bad boys pack a MAJOR punch and a little goes a long way with chipotles in adobo.
I have never, NOT ONCE, used up an entire can of chiptoles in adobo in one day and so my tip for you is to put the remaining ones (and sauce) in ice cube trays and freeze in single pepper portions!
Next time I need some (usually for Instant Pot Chipotle Beef Bowls), I pop them out of the ice tray easily.
Once you mix your simple 4 ingredients together, you need to wash and chop your tuna vehicle of choice (aka veggies).
I like to cut cucumbers into 3 inch sections, the cut lengthwise, and scoop out the seeds and create a cucumber boat.

Low Carb Chipotle Tuna Snack Box
- 1 can flaked white tuna IN WATER (not oil), drained
- 2 tablespoons finely diced red onion
- 2 tablespoons diced chipotles in adobo sauce
- 1/3 cup mayo can sub plain Greek yogurt
- 2 green peppers
- 1 small cucumber
- In medium bowl, combine the tuna, onion, chipotle peppers with adobo,and mayo. Set Aside.
- Remove the stem and seeds from the peppers and divide each pepper into 3 "cups".
- For the cucumbers, cut into 3 inch (ish) sections. Cut the cucumber pieces lengthwise, and scoop the seeds out.
- The veggies keep longer and don't go soggy if you lay them out on paper towel and ensure they are as dry as possible.
So, there you have it, a quick, easy Low Carb Chipotle Tuna Snack Box!
