Can I use ground beef instead?
Yes! My husband actually prefers the recipe with ground beef, but I am a fan of ground turkey. Any lean ground meat will be just fine for this recipe.
I like sauce, Is this a saucy recipe?
No, this is not a saucy stir fry. If you have ever tired the ever popular egg roll in a bowl recipes, this is very similar to that style.
Can I freeze this?
No, I personally don’t freeze this. Frozen cabbage reheated is a no for me.

No, not as written in the recipe – because, low carb is the goal here.
But, my husband reports that adding ketchup is a game changer for this recipe and he adds it, so I say – go ahead and add it to fit your way of eating!

Low Carb Cheeseburger Stir Fry {Meal Prep}
Ingredients
- 1 lb ground turkey you can sub in ground beef (omit the oil if you do)
- 1 tbsp olive oil
- 1 bag (379g) coleslaw salad bag You can also shred your own cabbage
- 1 tsp salt
- 1/2 tsp fresh ground pepper
- 1/4 cup diced onion
- 1/2 cup sliced or diced dill pickles
- 3 tbsp mustard add more for more flavor if you prefer
- 1/4 cup water
- 1/2 cup shredded cheddar cheese
- sesame seeds, garnish
Instructions
- In a large skillet, heat the oil on medium heat.
- Once hot, add the ground turkey and break it up to cook.
- When turkey is no longer pink, add the onions, salt and pepper, and saute for 2 minutes. Add a tbs of water if your turkey is very dry.
- Add the coleslaw bag, and pickles. Put a lid on the skillet and let the coleslaw cook down for about 3 minutes - until cabbage is tender.
- Once cooked down, stir in the mustard and water. Allow excess water to cook down, and if your mixture is really dry, add a table spoon of water in.
- Stir in the shredded cheese.
- Divide into meal prep containers and garnish with sesame seeds.
- Allow the meal preps to cool to to the touch, then add the lid and place in the fridge for no more than 4 days.
Ok! This one snuck up on me! I was not expecting to love it as much as I do! I’m definitely keeping it on hand, printing it out and putting it in the quick recipe binder! I had everything on hand and it came together in under 10 minutes. Good thing, because I was STARVING! I loved the way the coleslaw mix wilted just a bit, and I added a bit more at the end to give it a little crunch! I wasn’t sure how I’d feel about the mustard in there but it was the PERFECT flavour to make it taste like a cheeseburger. SO SO Good! If you haven’t made this yet, you HAVE to give it a try, especially if you’re low-carbin’ it up!

This was a genuine surprise to my family. Had been meaning to fire it up for lunches but needed a quick and different dinner idea. Added in some precooked bacon I had in the fridge, gave it just that little extra pop! Will for sure be making this again and again.
