Number one reason we love Instant Pot everything for holiday cooking is that you can free up precious oven and stove top space and just leave your Instant Pot without worrying about things boiling over.

These Instant Pot savory garlic mashed potatoes are just that – savory – for a few reasons. Russet potatoes, butter, and Boursin cheese!

Can I make swaps?

Of course!

 I use russet potatoes, but feel free to swap with a Yukon Gold for these mashed potatoes. 

I also don’t peel my potatoes. You do you and peel if you want to!

Boursin cheese? Don’t know what that is? Can’t find it? No worries. I am in Canada and have no problem finding it, but if you can’t find it in your area, I am told by my American friends in the Meal Plan Addict Community that Rondelle is a close sub as is Allouette. 

This cheese is Gournay cheese and is taken to the next level with garlic and herbs. When it melts into your potatoes… OMG.

Can I use a hand mixer to mash?

I have been seeing this hack all over the internet where you use a hand mixer to mash your potatoes. 

Yes, you can. BUT,  I have found doing that creates a particular texture. The only way to describe it is that your potatoes are gummy. Not in a bad way – just different. 

I opt for the good ol hand masher method – but our preference is not super smooth potatoes.

Get creative with add in’s too.

Want to go ultimate savory? Add bacon or pancetta. Cue drooling. 

Do I  need special accessories?

For this method, I use the steam function on the Instant Pot. That function requires the food to not be directly on the bottom surface of the liner. 

I use this Instant Pot steamer basket, for my potatoes. It also makes life a bit easier because after the pressure cycle, you can just pull it out (the handle is safe) and dump out the water. Then return the potatoes to the liner, and add the savory stuff. 

If you cook the potatoes directly in the pot, when you go to quick release the pressure, you are going to have a foamy mess on your hands.

Instant Pot Savory Garlic Mashed Potatoes

Ingredients

  • 6 cups cubes russet potatoes
  • 2 cups water
  • 150g package Garlic & Fine Herb Boursin Cheese
  • 1/2 cup cream or milk add more milk if you prefer smoother mashed potatoes
  • 3 Tbsp butter
  • salt and pepper to taste

Instructions

  • Cube your potatoes and place into the steamer basket. Peeling the potatoes is your choice.
  • Add 2 cups water into the instant pot liner, then load the basket in.
  • Select the steam function and set the pressure cook time to 7 minutes.
  • When the pressure cycle is complete, quick release the pressure.
  • Lift the steamer basket out, and set aside.
  • Dump the water in the liner out.
  • Place the liner back into the Instant Pot base and add the potatoes from the steamer basket.
  • Add the cheese, cream, and butter.
  • Using a potato masher, mash the potatoes to desired consistency. Add more liquid if needed.
  • Set the Instant Pot to keep warm and let the mashed potatoes sit there until time to serve.

Notes

Got Leftovers? Store them in the fridge for up to 4 days or freeze.
Thaw and microwave to reheat.
