Ingredients

  • 2 cups (250 g) dry, uncooked penne.
  • 1 red pepper, diced
  • 1/4 cup diced red onion
  • 1 cup mozzarella, cubed or use bocconcini balls
  • 1 medium carrot, peeled and diced
  • 1 long english cucumber peeled and diced
  • fresh ground pepper to taste
  • Italian Dressing to taste and preference

Instructions

  • Boil the penne to al dente according to the directions on the box.
  • Pour the pasta into a strainer and then rinse with cold water to stop the cooking process.
  • Gently combine all of the ingredients in a large bowl.
  • Refrigerate at least one hour before serving.
  • Store in the fridge for up to 4 days.
