Vanilla Chia Seed Peanut Butter

Making peanut butter in the Vitamix is so easy, and kicked up just a notch with a few ingredients to make it Vanilla Chia Seed Peanut Butter!

  • 4 cups Unsalted roasted peanuts
  • 2 tbsp vanilla extract
  • 2 tsp coconut oil
  • 1 tbsp chia seeds


  • Add all ingredients to the blender, except the chia seeds. You can add more coconut oil if you like a smoother peanut butter. 
  • Blend on low speed, gradually increasing to full speed. You will need to stop the blender and scrape the sides down a few times if you don't own a tamper tool. If you have a temper, you can just move the peanuts around while it is blending. It will take 1-2 minutes to go smooth.
  • Add the chia seeds to the blender jar and pulse a few times until the chia seeds are incorporated. 
  • Transfer to air tight containers. Homemade peanut butter is good for 6 months in the fridge! But... it will be gone before then!
