Broccoli Cheddar Chicken Fritters are an easy low carb dish! These fritters can be made in the Air Fryer or stove top of for a quick, yet low carb meal.
1lbboneless skinless chicken thighs, cut into small pieces
2largeeggs
1/2tspgarlic powder
1/2cupall purpose flour
1cupshredded cheddar cheese
2cupsbroccoli florets, steamed, and chopped fine
salt & pepper to taste
Olive oil
Instructions
In a large bowl, combine the bite size chicken pieces, garlic powder, eggs, almond flour, shredded cheese, broccoli, salt and pepper.
Gently combine.
Air Fryer Directions
Using scoop the mixture into a GREASED basket. Make uniform sized fritters in your air fryer. The number of fritters will depend on the size of your air fryer. Use the back of a spoon to flatten them.
Set your air fryer to 400F and cook for 8 minutes.
Flip and cook for another 2 minutes.
If you do thicker fritters, the cook time will need to be increased. Always check for doneness before removing from the air fryer.
Repeat these steps until all of your "batter" is used up.
Stove top directions
In a large skillet, heat 3 tablespoons of olive oil.
When oil is hot, add the fritter mixture a scoop at a time.
Flatten out the tops with the back of your spoon and sauté uncovered 4-5 minutes.
Flip and saute 3-4 minutes on the second side until chicken is fully cooked. Note: you may need to add more oil.
