Is there anything you can't put chipotles in and not make it better?! Ok, probably, but certainly not this super easy Low Carb Chipotle Tuna Snack Box

- 1 can flaked white tuna IN WATER (not oil), drained
- 2 tablespoons finely diced red onion
- 2 tablespoons diced chipotles in adobo sauce
- 1/3 cup mayo can sub plain Greek yogurt
- 2 green peppers
- 1 small cucumber
In medium bowl, combine the tuna, onion, chipotle peppers with adobo,and mayo. Set Aside.
Remove the stem and seeds from the peppers and divide each pepper into 3 "cups".
For the cucumbers, cut into 3 inch (ish) sections. Cut the cucumber pieces lengthwise, and scoop the seeds out.
The veggies keep longer and don't go soggy if you lay them out on paper towel and ensure they are as dry as possible.
