Ice Cube Tray Mini Pizza Pockets

Using an ice cube tray you can fill your freezer with stuffed mini pizza pockets in an easy and fun, kid-friendly way. This method turns pre-made pizza dough and your favorite toppings into these cute bite-sized treats that everyone will love and a way to have grab and go snacks in your freezer.

Ingredients

  • 80 g Pizza Dough this is the equivalent of 2 pre made Pillsbury dough sheets
  • 1/2 cup pizza sauce
  • 5 oz mozzarella slices
  • 24 pepperoni slices
  • 1 egg for egg wash

Instructions

  • Line your tray with rolled out dough
    I use my 2 tablespoon souper cubes tray because the well is a bit larger than a traditional ice cube tray and the fact that it is made from silicone means you can pop out the frozen bites much easier than a plastic tray.
    Gently press the dough into each well.
  • Add Fillings
    We are keeping this simple with mozzarella, sauce, fresh basil and diced pepperoni, but go ahead and use any toppings you like.
    Stuff as much as you can into the wells.
  • Egg Wash Dough
    Egg wash is simply a whisked egg and is brushed on in between the dough layers to help the pizza bites stay sealed.
  • Roll on the Second Dough layer
    Gently place another layer of dough on top. Use a rolling pin to help the dough layers seal. This will also remove excess air.
    To pull the bites apart after freezing, cut the dough using a sharp knife but be careful not to apply too much pressure to slice your trays.
  • Freeze
    Trying to remove the pizza bites from the tray without freezing them - even a bit, is going to end up in a messy disaster.
    The bites do not need to be frozen solid, but freezing for at least an hour makes them super simple to remove from the tray.
    Once partially frozen you can remove them from your tray and cut off the excess dough as needed. I like to return the bites back to the freezer on a parchment lined tray to fully freeze.
    Once the bites are frozen, transfer to freezer safe zip bag.
  • Cook from frozen in the oven or air fryer.
    Air Fryer - 350F for 5-10 minutes depending on how thick your pizza dough is. Flip halfway. Don't forget to spray the tray and the bites with oil.
    Oven - 400F for about 20 minutes. Again, the final cooking time will depend on the size of your bites and the thickness of your pizza dough. Flip halfway
  • Serve with ranch or marinara and enjoy!

Notes

The ingredient quantities here are just an estimate. You can use as much or as little of the topping ingredients as you need. 
How thin you roll your dough determines how much you will need at the end.
