Crispy Breakfast Sausage Taquitos

Prep these crispy breakfast sausage taquitos with tortillas, egg, cheese, & breakfast sausage, for a week of easy meal prep breakfasts, or batch cook and freeze them for camping or busy work week mornings.

Ingredients

  • 1 tbsp butter
  • 3 eggs
  • salt & pepper to taste
  • 12 breakfast sausage links
  • 1 cup shredded cheese
  • 12 taco size flour tortillas
  • olive oil spray

Instructions

  • Preheat oven to 400°F
  • On medium heat, melt butter in a frying pan. When pan is hot, scramble eggs and set aside. Add salt and pepper to taste.
  • In the same frying pan, cook the breakfast sausages according to the directions on the package. Set aside.
  • Lay out a tortilla, and scoop egg onto it. Add the sausage, then cheese. Roll the tortilla as tight as you can.
  • Place the rolled up taquitos seam down on a sheet pan.
  • Spray with olive oil spray (lightly!)
  • Bake for about 10 minutes. You can also use the broiler to get crispy taquitos faster.
  • Allow the taquitos to fully cool before storing in a container or freezing them.

Notes

For ultra crispiness, use an air fryer. 400F for 6-8 minutes.
