Sesame Garlic Edamame

Ingredients

Sesame Ginger Sauce

  • 2 tsp sesame oil
  • 2 cloves garlic, minced
  • 1 tsp minced or pureed ginger
  • 2 tbsp soy sauce
  • 1/2 tsp sriracha hot sauce
  • 1 tsp rice vinegar
  • 1/4 cup honey
  • 1 tbsp water

Edamame & Garnish

  • 2 cup frozen edamame (in shells)
  • 1/3 cup slivered almonds
  • pinch sesame seeds

Instructions

  • Cook the frozen edamame beans via your preferred method (Boil, microwave, or steam).
  • In a large pan, heat the sesame oil on medium heat.
  • Once hot, add in the garlic and ginger. Swirl that around for 1 minute - take care to not burn the garlic or you will have to start over.
  • Add all remaining sauce ingredients and combine and heat.
  • Allow the sauce to simmer for 2-3 minutes.
  • Add the cooked edamame into the pan and use tongs to combine with the sauce until all of the pods are covered.
  • Keep on heat until sauce is desired thickness. The longer it sits on the stove, the thicker and stickier the sauce will be.
  • Top with slivered almonds and sesame seeds. Serve warm.
