Lemon Blueberry Nice Cream
Lemon blueberry nice cream will convert even banana haters to nice cream lovers! With only 3 ingredients, this beautiful summer treat is ready in under 5 minutes using only a food processor.

- 2 cups frozen and sliced banana (approx 3-4 bananas)
- 1 cup frozen blueberries
- zest of 1 lemon
- lemon juice from ½ a lemon
Place all of the ingredients into a food processor.
Blend at high speed until it starts to form ice cream texture. You will have to stop the processor and scrape the sides down a few times.
Repeat scraping the bowl and blending until desired texture is reached. This normally takes less than 5 minutes.
This is best served immediately. If you decide to freeze it, be aware if freezes solid, not like regular ice cream. It will need to thaw a bit to return to the soft texture.
