Ingredients
1lbground turkey
1 lbground beef
1smallonion, diced
3clovesgarlic, minced
1red pepper, diced
1largecarrot, grated
1mediumzucchini, grated1-2 cups
1jalapeno, seeded, and diced
28ozcan crushed tomatoes (not diced)3.5 cups
1cupbroth (beef or chicken)
1.5tbspchili powder
1tspcumin
1tbsporegano
Salt and Pepper, to taste
Instructions
Press the saute feature, and brown your meat, breaking it up as it cooks.
When the meat is done, add the onion and garlic. Stir and saute for 2 minutes.
Pour in the broth and deglaze the pan (scrape the bits off the bottom). THIS IS IMPORTANT so you don't get the burn signal.
Stir in the spices to the meat and broth.
Add the veggies on top if the meat. Do not stir.
Add the crusted tomatoes on top of the veggies. DO NOT STIR. You do not want the tomatoes touching the bottom of the pot - or you may get the burn notice.
Secure the lid. Seal the pot, and set the pressure time for 10 minutes.
When the pressure cycle is done, carefully do a quick release.
Top with desired toppings.
Notes
Can I swap...
No beans for beans. Yes, you can add beans. However, after beans are pressure cooked they don't hold up well when the chili is frozen. So, if you plan to freeze your chili, leave the beans out.
Diced tomatoes for the crushed tomatoes called for? You can. But, I wouldn't. The crushed tomatoes add to the thicker texture of this recipe. If you use diced tomatoes, add tomato paste (but, that may increase the risk of the burn signal).
