    This Turkey Carrot Sheet Wrap is perfect for those following a gluten free way of eating, or those of us who are simply looking for creative ways in increase our veggie intake using vegetable sheets! 

    Turkey Carrot Sheet Wraps

    Here I go again with my veggie sheet cutter. After my last post on Breakfast Roll Ups using this new gadget, it is time to move to a lunch idea.

     I am really liking this new Kitchen Aid attachment … for the most part.

     My biggest complaint is that you do have to putz around to find/create perfectly sized produce in both width and length, but let me tell you, when you find a giant carrot that will be perfect for creating sheets, you grab that bad boy and then figure out a recipe later.

    Seriously, these carrots where SO BIG… and we ended up with more than a few sheets!

    Carrot sheets last 4-5 days and so they are perfect for prepping on Sunday and having available all week for lunch wraps!Carrot Sheet Wraps {Make Ahead}

    I am pumped to try lots of different combination inside my carrot wraps, but here is what I started with!

    Turkey Carrot Sheet Wraps

    This recipe is for one wrap and the ingredient amounts are pretty loosey goosey – but my goal was to simply show you an idea of what to do with carrot sheets! Get creative… and make sure to tag me on Instagram (www.instagram.com/mealplanaddict) so I can see!

    Turkey Carrot Sheet Wraps {Make Ahead}

    Ingredients

    • Carrot Sheet created using the Kitchen Aid Vegetable Sheet Cutter– 6 inches long. I use nante carrots also known as Chinese jumbo carrots. A regular carrot is likely going to be too small for this.
    • Hummus
    • Greens such as spinach
    • Red onion
    • Cooked leftover turkey breast (deli style will work great as well!)

    Instructions

    • Lay out the carrot sheet
    • Add a dollop of humus
    • Pile on the greens, turkey, and onion.
    • Roll the wrap and secure with a toothpick or skewer.
    • Store assembled for 2-3 days, or store the sheets alone for up to 5 days in a sealed container in your fridge.

    Calories: 150kcal | Carbohydrates: 20g | Protein: 10g | Fat: 5g | Fiber: 6g | Sugar: 7g

     

    So, there you have it, no more saying veggies are boring!! Get wrapping and rolling with your carrot sheets!!!
