Rolling with my little Instant Pot Faux-Tisserie Chicken series, and in follow up to the Ginger Pineapple Faux Tisserie Chicken , I would like to introduce you to…. Mr. Spicy Italian Faux-Tisserie Chicken!

This recipe looks super basic… and that is what I like. Limited ingredients, but a very non boring chicken.

I mean who wouldn’t want a hot Italian in their kitchen?

Given I am married to a Canadian guy, this might be the closest I get to a hot Italian in my kitchen anytime soon!

And good news... Mr. Spicy Italian doesn't only need to be in your kitchen either... he can also go into your lunch bag!

I make these lunch bowls and then freeze them after they are cooked too.

As per usual, this is an easy prep raw and freeze recipe.

Simply put the chicken and all of the ingredients into a zip back, label, seal and freeze for up to 3 months.

On cook day, dump the bag into your Instant Pot liner, set the timer, and go do something else while dinner cooks!

Seriously though, isn’t he so beautiful?!

I use the hottest peppers you can get but you can control the heat in the recipe by using mild peppers, or using less. The heat is totally up to you!

Cook Time: 25 minutes
Total Time: 30 minutes

Ingredients

  • 3-4 pound whole chicken
  • 796 mL 26oz can diced tomatoes (not drained)
  • 4 cloves garlic minced
  • ½ tablespoon dried oregano
  • ½ tablespoon dried thyme
  • ¾ cup - 1cup jarred sliced hot banana peppers more or less to preference.

Instructions

  • To prep, add all of the ingredients to a zip bag.
  • Label the bag, seal it, and store in the freezer for up to 3 months.
  • On cook day, add the thawed contents to your Instant Pot liner.
  • Select manual or pressure cook button (depending on the model you have) and set time for 6 minutes per pound. As a general rule for the Costco chickens, I set to 20-25 minutes.
  • When pressure cook cycle is complete, let naturally de pressurize for 10 minutes, then quick release remaining pressure. Always use a meat thermometer to ensure the internal temperature is 165F.
  • If you like a crispier skin, pop under the oven broiler or into an Air Fryer until the skin reaches desired crispiness.

So, there you have it, a simple way to get a hot Italian into your kitchen (and freezer!) … without a divorce!
