Hellooooo summertime… and hello summer recipes!
If you have seen my Instagram lately, I have been basically hitting up any farmers market I can find these days. I have been loving it! What I love THE MOST is talking to farmers directly about their food. Farmers are just as passionate about good food as I am. They are my people.
One of my latest market hauls was peaches. Millions of peaches. Peaches for me!
Ok well this recipe doesn’t need millions of peaches… just more like six. But six feels like six hundred when you are taking the skin off and cutting them up. Or, I am just impatient. Yea… definitely just impatient.
This recipe is an awesome fill your freezer recipe to take some of your summer peaches off your hands. I give myself bonus points as I was able to add in some protein with the plain greek yogurt! My daughter has no idea these are far healthier than the store bought. #momwin.
I know, I know, you are wondering about my zipsicle bags, aren’t you!
I snagged these at a cute little store in Courtenay, BC when I was recently on Vancouver Island, but you can grab yours on Amazon.
They even have a fill line so you know how much to fill them. The seal on these is fantastic and the plastic is nice and thick – perfect for the freezer.
I am pretty sure this is just the beginning of my DIY freezie adventures!
- 2 cups diced peaches skins removed, appox 6 peaches
- 1/2 cup plain greek yogurt
- 1/4 cup almond milk
- 1 Tablespoon honey more or less to taste
Combine all ingredients in a food processor until smooth
Using a funnel, fill up the zipsicle bags.
