This Healthy Festive Salsa is my holiday potluck go to dish! It really is as simple as tossing together some delicious fruits and veggies together in a bowl. This salsa is even better if it is made ahead and the flavors get to mingle!
Everyone has that one thing they serve every holiday season.
For my mom, it was always her famous cheese ball that I almost single handedly take down on my own.
At my house, it is this Healthy Festive Salsa.
It is pretty much the only time I see my dad loving on my veggie creations, so I make sure its served up every single year.
Not only is it a staple at my house for Christmas Eve and Day, it has been my potluck go-to for years.
I can’t even tell you how many times I had to jot down the recipe on a napkin before I was allowed to leave the party.
I call this festive because it really does look like Christmas in a bowl. Bonus points because this is jam packed with vitamins from the colorful veggies, and is sweetened with the natural sugars of the pineapple and pomegranate.
Even better – this appy results in only one dirty cutting board and a dirty bowl. Ok.. and a dirty knife.
You can absolutely make your healthy festive salsa the day before, but hold off adding the pomegranate arils until you serve it so they don’t bleed and wreck the pretty festive colors of your salsa.

Healthy Festive Salsa
- 2 cups green peppers diced
- 3/4 cup red onion diced fine
- ¼ cup cilantro chopped fine
- Juice of one lemon
- 2 cups fresh pineapple choppped into bits
- 1 cup Pomegranate arils Pomegranate arils
- 1/4 tsp red pepper flakes
- Place all ingredients in a bowl and gently mix.
